FREE SPIRIT EL DIABLO

INGREDIENTS
1 inch serrano chili, about ½ chili
1 Tbsp. fresh ginger
1 Tbsp. black current jam
1 oz. lime juice
2 tsp. caramel sauce
3 drops vanilla
pinch cinnamon
large ice cube
3-4 oz. soda water
1 rosemary spring
DIRECTIONS
Roughly chop serrano & ginger, add to shaker glass & muddle until macerated.
Add jam, lime juice, caramel sauce, vanilla & cinnamon. Stir with mudding stick until incorporated.
Strain mixture though a fine mesh sieve into a measuring cup or other vessel, pushing down on ingredients to extract all liquid.
Pour liquid into serving glass & add large ice cube.
Pour soda water over the top of the cube to create a float of current colored syrup on the bottom of the glass.
Garnish: Take the rosemary spring, slap between your hands then drop on top of the drink. Serve with a swizzle stick.
