FREE SPIRIT EL DIABLO

INGREDIENTS

  • 1 inch serrano chili, about ½ chili

  • 1 Tbsp. fresh ginger

  • 1 Tbsp. black current jam

  • 1 oz. lime juice

  • 2 tsp. caramel sauce

  • 3 drops vanilla

  • pinch cinnamon

  • large ice cube

  • 3-4 oz. soda water

  • 1 rosemary spring

DIRECTIONS

  1. Roughly chop serrano & ginger, add to shaker glass & muddle until macerated.

  2. Add jam, lime juice, caramel sauce, vanilla & cinnamon. Stir with mudding stick until incorporated.

  3. Strain mixture though a fine mesh sieve into a measuring cup or other vessel, pushing down on ingredients to extract all liquid.

  4. Pour liquid into serving glass & add large ice cube.

  5. Pour soda water over the top of the cube to create a float of current colored syrup on the bottom of the glass.

Garnish: Take the rosemary spring, slap between your hands then drop on top of the drink. Serve with a swizzle stick.
