THE VERA PINK CLOUD

A take on the Clover Club but with a fluffy topper of Vera Ginø foam.

INGREDIENTS

  • 2 oz. Vera Ginø

  • 1 thin slice of beet or 1/4 tsp. beet juice

  • 1 tsp. Meyer lemon juice (regular lemon juice is fine as well)

  • 1 fresh rosemary spring, smacked

  • 1/2 tsp. honey

  •  Vera Ginø foam:

  • ½ oz. egg white or aquafaba

  • ¼ tsp. honey

  • 1 oz.Vera Ginø

DIRECTIONS

  1. Add Vera Ginø, slice of beet, lemon juice, ½ tsp. honey & a spring of smacked rosemary to shaker can. Stir to dissolve honey then add ice & shake vigorously.

  2. Strain drink into serving glass, dump out shaker can & give a rinse.

  3. To make Vera Ginø foam: Add egg white, ¼ tsp. honey and remaining Vera Ginø to shaker can. Stir to dissolve honey. Vigorously dry shake (no ice) for a good 30 seconds until very soft peak foam forms.

  4. Immediately, top drink with foam.

GARNISH-spoon any extra foam left in shaker on top to create the cloud effect
