THE VERA PINK CLOUD

A take on the Clover Club but with a fluffy topper of Vera Ginø foam.
INGREDIENTS
2 oz. Vera Ginø
1 thin slice of beet or 1/4 tsp. beet juice
1 tsp. Meyer lemon juice (regular lemon juice is fine as well)
1 fresh rosemary spring, smacked
1/2 tsp. honey
Vera Ginø foam:
½ oz. egg white or aquafaba
¼ tsp. honey
1 oz.Vera Ginø
DIRECTIONS
Add Vera Ginø, slice of beet, lemon juice, ½ tsp. honey & a spring of smacked rosemary to shaker can. Stir to dissolve honey then add ice & shake vigorously.
Strain drink into serving glass, dump out shaker can & give a rinse.
To make Vera Ginø foam: Add egg white, ¼ tsp. honey and remaining Vera Ginø to shaker can. Stir to dissolve honey. Vigorously dry shake (no ice) for a good 30 seconds until very soft peak foam forms.
Immediately, top drink with foam.
GARNISH-spoon any extra foam left in shaker on top to create the cloud effect
